Mình thắc mắc cái nước giấm trong nồi nấu như nào mà ngon nhể. Mình đã nấu được theo cách của Mẹ mình chỉ, nước giấm ngọt dịu, thơm và hậu rất dễ chịu. Bò không cần ướp gia vị, quan trọng là mắm nêm ngon, măm nêm như linh hồn của món này vậy.
Chuẩn bị nguyên liệu sẵn sàng. Cắt 1/4 miếng thơm vừa ăn. Hành tây cắt múi cau. Sả đập dập cắt khúc.
Thịt bò khi mua nhờ cắt lát mỏng. Xếp lên đĩa, rãi hành phi lên mặt cho đẹp mắt. Bọc màng thực phẩm bỏ ngăn mát tủ lạnh, khi ăn mới lấy ra để thịt bò có màu đỏ đẹp mắt.
Nấu nước giấm: Cho nước 1 trái dừa tươi (khoảng 400 ml) + 150ml giấm + thơm +hành tây + sả vào nồi, đun sôi với lửa vừa.
Nêm vào cùng: muối, đường, bột ngọt. Nếm thử theo khẩu vị vừa ăn. Nước sôi bùng cho thơm và hành tây chín là được. Tắt bếp.
Pha mắm nêm: Mắm nêm nêm chọn loại đã xây và rây mịn ở chợ. Bằm nhuyễn thơm, và cho vào tô cùng: 5 muỗng canh, 100 gram thơm, 1 muỗng canh đường, 5 ml nước cốt chanh, 2 tép tỏi, 2 trái ớt, 1/4 muỗng cà phê bột ngọt, 2 muỗng nước lọc. Khuấy đều.
Khi ăn bày như món Lẩu. Rau sống rửa sạch, chuối khế bào lát mỏng. Mỗi người tự nhúng phần bò vừa đủ khi cuốn, chấm mắm nêm ăn kèm.
